The Best Banana Nut Bread

Delicious, moist banana nut bread

Three overripe bananas means just one thing in our family: banana nut bread!!  I can still remember how every Christmas my mother would bake mini-loaves for all of our teachers and wrap them in colored cellophane tied with curly ribbon. The smell of banana bread baking in the oven is one of my earliest childhood memories and triggers many happy thoughts. This smell is guaranteed to wake people up happy.


1 cup sugar

1/2 cup cooking oil

2 eggs, beaten

3 ripe bananas, mashed

2 cups flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

3 TBS milk (1/4 cup)

1/2 tsp vanilla

1/2 cup chopped nuts


Beat oil and sugar together. Add eggs and banana pulp and beat well (by hand). Add sifted dry ingredients, milk, and vanilla. Mix well and stir in nuts. Pour into greased and floured loaf pan. Bake in pre-heated moderate oven (350 degrees) for about an hour.
